Flavors from Around the World Made with Local Ingredients
Allmuen is the restaurant we’ve always dreamed of—a casual and cozy bistro for every occasion. We opened at Torgallmenningen in downtown Bergen on December 10, 2016, and serve food we love ourselves, made from ingredients we’re proud of. The ingredients come from a large network of producers in Western Norway, handpicked for their commitment to the environment and animal welfare. Among them are lamb from the Old Norwegian Spælsau breed at Tunagarden in Syse, Ulvik; cattle from Larsastova in Folkedal and Selheim Gård in Voss; wild-caught seafood with the catch date listed from Lerøy Alfheim in Skuteviken; and vegetables from Toppe Gartneri in Mjølkeråen. In the kitchen, a Josper charcoal grill takes center stage, along with in-house fermentation, which has been a part of the operation since the beginning.

What is dry-aged beef?
Dry-aged beef is beef hung in a controlled climate for many weeks, which makes the meat more tender and the flavor more concentrated. Ours hangs for 8 to 12 weeks and comes from Larsastova in Folkedal (Granvin) and Selheim Gård in Voss. Entrecôte, sirloin or tenderloin, depending on availability. Grilled on the Josper charcoal grill and served with seasonal sides. 300 g with sides to share costs 1,695 kr, enough for two.

What is Åpen Mat?
Åpen Mat is our 5-course tasting menu, where the kitchen chooses dishes from the day's ingredients. We've had the concept since we opened in December 2016. Seasonal ingredients over five courses. 995 kr per person, wine pairing 995 kr.

What is Saturday brunch at Allmuen?
Our Saturday brunch is made for sharing: the table is set with several dishes for everyone. Every Saturday 12:00–15:00, 375 kr per person. Seasonal ingredients from Western Norway, Josper-grilled fish and our own baked goods. Christmas brunch is served every Saturday and Sunday from November 21 to December 20, 2026, 425 kr per person.
How We Select Our Ingredients
We visit the farms we work with, and new producers must undergo taste tests before becoming regular suppliers. Some partnerships have been in place since we started in 2016, while others are new each year. New ingredients are regularly tested based on taste, season, geography, and price. When a farm has a particularly good season, we let that ingredient take center stage on the menu that week. This results in more variety, less predictability, and better dishes on the plate.
How We Work in the Kitchen
Wild-caught fish is grilled briefly on the Josper charcoal grill so the flesh stays juicy and flakes apart. The high heat gives a quick Maillard reaction on the surface without drying out the center, and the charcoal adds a mild smoky flavor. The whole fish is used: the fillet as its own dish, the rest in other dishes, stock and soup. The beef is dry-aged for 8 to 12 weeks in the restaurant, where natural enzymes break down connective tissue and build umami over time. Our own pickling and fermentation give the dishes acidity, aroma and depth all year round. Our signature dish is grilled sourdough bread.
